I have lived on three continents so far : Africa, Europe and America. I know the challenge of adjusting to different cultural eating habits, taste, smell and texture. Equally, I understand the challenge of navigating food environments with an abundance of food items offered in appetizing food courts, bakery displays, vending machines, and fast food restaurants, etc., consistently appealing to one’ senses. They are a constant invitation to consume and indulge at any hour of the day, most of the time at cheap cost. In some parts of the world, eating is only a pin code, a wireless transaction, and nowadays a ring bell away. This type of food environment has the capability to disrupt normal physiological processes and appetite cues. Specifically, disruptive food environments can lead to eating disorders (binge eating, anorexia, bulimia, avoidant/restrictive food intake disorder, …) and many metabolic dysfunctions and diseases such as diabetes, obesity, high blood pressure, abnormal cholesterol levels, fatty liver disease, cancers, excess body fat, etc.
Many of these diseases are also referred to as « diseases of civilization » meaning they are linked to some extent to our lifestyle and environment. They are a huge burden on individuals, families, communities and societies as a whole.
